I have been looking forward to dinner all day! Since yesterday, really!
We are having Leann Ely's Parmesan fish--this is sooo good. I use tilapia. It's pretty easy. You coat the fish in a mixture that is half flour, half cornmeal. Then you dredge it through EVOO mixed with real butter. Bake it (usually only about 20 minutes will do it) and sprinkle Parmesan cheese over it.
Easy and good. I also made a broccoli salad--the kind with red onion and bacon in it! That's in the fridge right now--the flavors mixing....oh my goodness! And there are sweet potatoes baking in the oven. :)
Then we will do Rotel dip to finish off any last remnants of the munchies while we're watching AI. Something interesting is bound to happen!

Hey Rebecca. We're all geared up for the "big show" tonight too. I'm not sure who my favorite is this year. I love the girl who sold her horse to be there...that's a very dear thing to me...horses. But I don't think she is the best vocally. As the season continues my favorite will emerge but I'm not sure I've got one just yet. Who do you like???

That sounds good!!! Maybe our cooking class (at co-op) could make some of that stuff. I know someone who is pregnant and 17 years old. I can't wait until this weekend, or next weekend, or camp LOL!!! I have a lot to look forward to. I think I'm gonna go, bye.
